How to Create the Ultimate Healthy Indulgence with Avocado Icing and Flourless Chocolate Cake




Ingredients:

For the Flourless Chocolate Cake:

1 cup dark chocolate chips

1/2 cup unsalted butter

3/4 cup granulated sugar

1/4 teaspoon salt

1 teaspoon pure vanilla extract

3 large eggs

1/2 cup unsweetened cocoa powder

Optional (1/2 teaspoon instant coffee or espresso powder (optional, but enhances chocolate flavor)


For the Avocado Icing:

2 ripe avocados, peeled and pitted

1/4 cup cocoa powder

1/4 cup maple syrup or honey (adjust to taste)

1/2 teaspoon pure vanilla extract

1 teaspoon melted cocnut oil

A pinch of salt

Instructions:

For the Flourless Chocolate Cake:

1. Preheat your oven to 375°F (190°C). Grease an 8-inch round cake pan and line the bottom with parchment paper for easy removal.

2. In a microwave-safe bowl, melt the chocolate chips and butter together. You can do this in 20-second intervals, stirring after each, until the mixture is smooth. Alternatively, you can melt them using a double boiler on the stove.

3. Stir in the granulated sugar, salt, and vanilla extract into the melted chocolate mixture.

4. Add the eggs one at a time, mixing well after each addition.

5. Sift the cocoa powder and instant coffee (if using) over the chocolate mixture and fold it in until well combined.

6. Pour the batter into the prepared cake pan.

7. Bake in the preheated oven for about 20-25 minutes, or until a toothpick or cake tester inserted into the center comes out with a few moist crumbs.

8. Remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.


For the Avocado Icing:

1. In a food processor or blender, combine the peeled and pitted avocados, cocoa powder, maple syrup or honey, vanilla extract, and cocnut oil and a pinch of salt.

2. Blend until smooth and creamy. You may need to scrape down the sides and blend again to ensure all ingredients are well incorporated.

Assembly:

1. Once the flourless chocolate cake has cooled completely, spread the avocado icing evenly over the top of the cake.

2. You can garnish the cake with fresh berries, shaved chocolate, or any other toppings you prefer.

3. Slice and serve your flourless chocolate cake with avocado icing.
